 Greek Chicken Gyros with Tzatziki Sauce and Greek Salad

Its been a while since anyone has posted. I was given this recipe on paper and couldn't find it online to save so I thought I would post it here incase I ever loose the paper with the recipe I still have it here.  

Chicken Marinade:

2 lbs Chicken Breasts

1/4 cup Greek yogurt

3 TBSP  fresh lemon juice

2 TBSP extra virgin olive oil

1 TSPS red wine vinegar

1 1/2 tsp salt

1/2 tsp pepper

2 tsp oregano

Place yogurt, lemon juice, olive oil, vinegar, salt, pepper, oregano into large ziplock bag or bowl and mix.  Add chicken.  Refrigerate for 2-4 hours or overnight.  Grill chicken on medium high heat for approx. 5-7 minutes per side.  


Tzatziki Sauce:

16 oz. plain Greek Yogurt

1/2 English cucumber with peel, grated

1 clove garlic

1 TBSP fresh lemon Juice

1 TBSP extra virgin olive oil

1 tsp grated lemon zest

1 1/2 TBSP chopped fresh dill (or about 1 tsp dried dill)

1 1/2 tsp salt 

1 tsp pepper

Squeeze excess water from grated cucumber then stir together with all the ingredients. Adjust seasoning as needed.


Greek Salad:

3 tomatoes, diced

2 cucumbers, peeled and diced

1/4 red onion, diced

2 TBSP fresh Italian parsley, chopped (or 1 tsp dried parsley)

1 TBSP extra virgin olive oil

salt and pepper to taste

Feta Cheese- desired amount

Mix all ingredients and toss to coat.


Warm or toast naan/pita bread.  Top with tzatziki sauce, chicken and Green Salad.

Easy Indian Butter Chicken

I made this for dinner last night and it was very good.  If you can overlook for extreme amount of dairy fat, it's definitely worth the effort.  Matt really enjoyed this - he had a hard time stopping.  Good thing there were lots of leftovers.

Easy Indian Butter Chicken (6 servings)


Ingredients

  • 1 cup butter, divided
  • 1 onion, minced
  • 1 tablespoon minced garlic
  • 1 (15 ounce) can tomato sauce
  • 3 cups heavy cream
  • 2 teaspoons salt
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garam masala
  •  
  • 1 1/2 pounds skinless, boneless chicken breast, cut into bite-sized chunks
  • 2 tablespoons vegetable oil
  • 2 tablespoons tandoori masala

I used Jane's broiled chicken recipe:  rub tandoori spices and some salt on chicken breasts and broil on high for 4-5 minutes per side.  Take out of oven and tent for 10-15 minutes.  The chicken is perfect!



  1. Melt a few tablespoons of butter in a skillet over medium heat. Stir in onion and garlic, and cook slowly until the onion caramelizes to a dark brown, about 15 minutes.
  2. Meanwhile melt the remaining butter in a saucepan over medium-high heat along with the tomato sauce, heavy cream, salt, cayenne pepper, and garam masala. Bring to a simmer, then reduce heat to medium-low; cover, and simmer for 30 minutes, stirring occasionally. Then stir in caramelized onions.
  3. Cut or shred broiled chicken breasts and add to sauce.

We served over brown rice.

Chicken Cordon Bleu - Crock Pot Style & Rolls

I am just going to link these ones.  But I found these new blogs and tried a few of the recipes tonight.  We had chicken cordon bleu from this site.  I liked that I could do it in the crock pot and prepare it early in the day.  It was pretty good, I used cream of mushroom soup and did put additional ham a swiss cheese on top.  I think next time I will either use my own cream mixture or cream of chicken soup and omit the ham and cheese on top.    I am intrigued by quite a few things on this site.

I have also found this blog and am really liking it.  I tried the Yummy Easy Whole Wheat Bread and we really like it.  Today I did the Amazing Buttermilk Rolls and they were good.  I do still have dough in the fridge, so we'll see if they do get better with sitting in the fridge a few days like some of the comments said.  I think I will just roll them as ball style rolls next time, I guess I am just not a fan of crescent shaped rolls.  Overall a good dinner tonight, even if all the kids didn't like it.

Chicken Bellagio

So, my newest favorite thing to get at the Cheesecake Factory is their Chicken Bellagio. It is truly amazing - get it if you are going there soon, if not you can make it at home!!! We tried it yesterday and YUM! I hope you like it.

CHICKEN BELLAGIO

FOR THE GARLIC BASIL PESTO:
1/2 cup fresh basil leaves, packed
2 Tbsp. freshly grated Parmesan-Reggiano or Romano cheese
2 Tbsp. extra virgin olive oil
1 Tbsp. pine nuts or walnuts (optional)
1 or 2 garlic cloves, minced or microplaned or grated
1/2 tsp. salt
1/4 tsp. black pepper

FOR THE PROTEIN:
2 boneless skinless chicken breasts
4 slices Prosciutto, room temperature

FOR THE BREADING:
1 large egg, beaten
1/4 cup flour
3/4 cup bread crumbs
1 tsp. salt
1/2 tsp. ground black pepper
1 tsp. dried parsley
1 tsp. oregano

FOR FRYING:
4 Tbsp. olive oil or enough to coat bottom of pan with 1/4 in. of oil

FOR THE PASTA:
6 oz. angel hair pasta
2 Tbsp. garlic pesto sauce

FOR THE PARMESAN CREAM SAUCE:
1 cup heavy (whipping) cream
3 Tbsp. garlic pesto sauce
1/3 cup Parmsan-Reggiano
1/2 tsp. salt
1/4 tsp. white pepper

FOR THE SALAD/GARNISH:
1 cup washed arugula
half a cup of shredded or grated fresh parmigiana regianno

To prepare the garlic basil pesto, add all of the ingredients for the pesto to a food processor and pulse until well blended; set aside.

Pound out the chicken breasts one at a time in between two pieces of plastic wrap or in a ziploc bag until flattened out evenly.

In a bowl, mix salt, pepper, oregano, and parsley into the bread crumbs to season.

Coat the breasts in flour, and then dip in the beaten egg, and then into the seasoned bread crumbs. Coat completely flipping the breasts over a few times to completely coat. Refrigerate the breasts on a plate for 15 minutes, uncovered, to get the seasoned bread crumbs to really stick. Remove the Prosciutto from the fridge and allow to reach room temperature for ease of separation.

Boil the pasta in salted water until done, about 10 minutes. Reduce heat to low until needed.

To prep the parmesan cream sauce, add heavy cream to a saute pan and bring the cream to a simmer, and incorporate the basil pesto. Add salt and white pepper to taste, and as it begins to thicken, add the parmesan cheese and stir vigorously to incorporate it. Continue to stir until it thickens more. Reduce heat to low to keep warm.

Preheat oven to 200 degrees F.

Heat a non stick or well seasoned cast iron skillet over medium low to medium heat. Add olive oil and fry the breasts on the first side until golden brown, about 3 minutes. Using tongs, dip each slice of Prosciutto into the hot oil for 10 to 15 seconds, and then place on each chicken breast (2 for each breast, overlapped). Use a thermometer to insure perfect doneness of the breasts. (I pull mine at internal temp of 150F). Place on plate in oven to keep warm.

TO ASSEMBLE:
Drain the pasta and place in a large bowl. Stir in garlic basil pesto. Place the pasta on a plate. Pour some of the cream sauce over the pasta. Add the chicken breasts with the Prosciutto slices facing upwards. Top the breasts with more cream sauce. Top with arugula. Drizzle the arugula with some extra virgin olive oil.

Chicken Tortilla soup from PW

Been waitin' for this one! Discovered it today...it's dinner tonight! I had to make some substitutions based on what we had at home, but wow! Super fine recipe (per her usual...).

Recipe: Chicken Tortilla Soup

Ingredients

  • 2 whole Boneless, Skinless Chicken Breasts
  • 1 Tablespoon Olive Oil
  • 1-½ teaspoon Cumin
  • 1 teaspoon Chili Powder
  • ½ teaspoons Garlic Powder
  • ½ teaspoons Salt
  • 1 Tablespoon Olive Oil
  • 1 cup Diced Onion
  • ¼ cups Diced Green Bell Pepper
  • ¼ cups Red Bell Pepper
  • 3 cloves Garlic, Minced
  • 1 can Rotel Tomatoes And Green Chilies
  • 32 ounces, fluid Low Sodium Chicken Stock
  • 3 Tablespoons Tomato Paste
  • 4 cups Hot Water
  • 2 cans Black Beans, Drained
  • 3 Tablespoons Cornmeal Or Masa
  • 5 whole Corn Tortillas, Cut Into Uniform Strips Around 2 To 3 Inches
  • Garnishes:
  • Sour Cream
  • Diced Avocado
  • Diced Red Onion
  • Salsa Or Pico De Gallo
  • Grated Monterey Jack Cheese
  • Cilantro

Preparation Instructions

Preheat oven to 375 degrees. Mix cumin, chili pepper, garlic powder, and salt. Drizzle 1 tablespoon olive oil on chicken breasts, then sprinkle a small amount of spice mix on both sides. Set aside the rest of the spice mix.
Place chicken breasts on a baking sheet. Bake for 20 to 25 minutes, or until chicken is done. Use two forks to shred chicken. Set aside.
Heat 1 tablespoon olive oil in a pot over medium high heat. Add onions, red pepper, green pepper, and minced garlic. Stir and begin cooking, then add the rest of the spice mix. Stir to combine, then add shredded chicken and stir.
Pour in Rotel, chicken stock, tomato paste, water, and black beans. Bring to a boil, then reduce heat to a simmer. Simmer for 45 minutes, uncovered.
Mix cornmeal with a small amount of water. Pour into the soup, then simmer for an additional 30 minutes. Check seasonings, adding more if needed—add more chili powder if it needs more spice, and be sure not to undersalt. Turn off heat and allow to sit for 15 to 20 minutes before serving. Five minutes before serving, gently stir in tortilla strips.
Ladle into bowls, then top with sour cream, diced red onion, diced avocado, pico de gallo, and grated cheese, if you have it! (The garnishes really make the soup delicious.)

Mock Kung Pao Pork (or Chicken)

I threw this together last night after looking at a few different recipes.  Sorry if it seems a little confusing.  I ended up loving this, and it really was easy.  It was a little spicy for the kids, but I can adjust that next time.  I had pork on hand so that is what I used, but you could substitute chicken.

In ziploc bag mix:
2 T. corn starch
2 T. soy sauce

(This is kind of a strange texture, but once you put the meat in it does work)

Dice 1 lb. (or so) pork or chicken and place in bag, coat well.

Heat ~2 T. oil and once hot, cook meat.  When your meat is almost cooked add the following:

2 carrots diced
3 celery stalks diced
1 lg bell pepper diced

You may want to add more, this is what I did but I didn't have a pound of meat.


Continue to cook until meat is thoroughly cooked.  Veggies are cooked but still a little crunchy (just like with any stir-fry).  At this point I added the sauce.

Sauce: (from this website)
In a quart jar mix the following:  (once in just put a lid on and shake) 

1/2 cup cornstarch
1/4 cup water
1 1/2 teaspoons garlic, minced 
3/4 cup sugar

1/2 cup soy sauce
1/4 cup white vinegar
14 1/2 ounces chicken broth (a can) 
1/4 cup sherry or 1/4 cup white wine
 I just used orange juice cause that's what I had on hand, I know it is no where near white wine or sherry, but what do you do.  Also I put this in after I had the sauce warm and thick to thin it out a bit. Also it seemed a little sweet to me so next time I think I will use  a little less sugar.

This made a ton of sauce so you may want to half it or just put it in a little at a time, depending on how much meat and veggies you have.

Pour sauce in with meat and veggies and cook until it thickens.


At this point I added just a squirt of Sriracha hot chili sauce and a handful or so of cashews.  Stir it up and serve over rice. 


Just a warning, I put in a squirt and stirred it in and tried it and I thought it could use just a bit more, well I think it gets spicier as it cooks because it ended up being pretty spicy.  So start small and let it sit a few minutes before testing it.  I happened to have this on hand, but I'm sure you could use red pepper flakes.

Lion House Chicken Enchiladas

I am always looking for a good chicken enchilada recipe. I've tried a lot of different recipes. This recipe comes from the Lion House Recipe Book. This recipe is my favorite by far, and my family loved it too. I did modify it a little. For example, I used only 1 cup of onions as opposed to the 2 cups in the recipe.

1 pound chicken breast cut into strips
1 cups chopped white onions
1/4 cup light sour cream
1/4 cup nonfat mayonnaise
1 can (14 ounce) chicken broth
1 1/2 cups shredded reduced fat cheddar cheese
8 flour or corn tortillas (I like flour, the recipe calls for corn, whichever you prefer.)
1 can (8 ounces) enchilada sauce (I used more than 1 can)

Brown chicken in a skillet. When the chicken is golden brown, add onions and cook for 5 to 7 minutes more. Remove from heat and set aside.

In a small saucepan, combine sour cream and mayonnaise. Very gradually add chicken broth to the sour cream mixture, stirring constantly. Do not add broth too fast or mixture will be lumpy. When thoroughly mixed, place saucepan over medium heat. Cook stirring constantly, until mixture starts to boil. Add 1 cup of the shredded cheese and stir over heat until cheese is melted. Set aside.

Spray 9 inch square baking dish with cooking spray. Set aside.

Pour enchilada sauce into a large shallow bowl. Dip 1 tortilla into the sauce, making sure both sides are covered with sauce. Remove tortilla from sauce and fill with sliced chicken and a little cheese. Roll tortilla around filling and place in prepared baking dish. Repeat until all the chicken mixture is used up. Pour sour cream mixture over filled tortillas. Sprinkle top with remaining cheese. Cover and bake at 375 degrees for 20-25 minutes.

Sesame Chicken

This is a yummy, easy recipe that can be made a few hours ahead of time (so it can marinate). There isn't much sauce to put over the rice, but we really enjoyed it especially with steamed broccoli. I got this recipe from my friend Rachael).

SESAME CHICKEN {Rachael Howell}

2-4 chicken breasts, cubed
1/4 c. sesame seeds
1/4 c. soy sauce
3 T. oil
2 T. brown sugar
1/4 tsp. pepper
3 cloves garlic, minced
4 green onions, chopped
1/2 tsp. ginger

Mix everything together in Ziploc bag and marinate 1-4 hours. Pour onto a cookie sheet (lined with foil for easier clean up) and broil for 10 minutes. Turn and broil 5 minutes more. Serve over rice with steamed broccoli.

Asian Orange Chicken

We tried this last night and it's delicious!!!

Ingredients

Sauce:
1 1/2 cups water
2 tablespoons orange juice
1/4 cup lemon juice
1/3 cup rice vinegar
2 1/2 tablespoons soy sauce
1 tablespoon grated orange zest
1 cup packed brown sugar
1/2 teaspoon minced fresh ginger root
1/2 teaspoon minced garlic
2 tablespoons chopped green onion
1/4 teaspoon red pepper flakes

3 tablespoons cornstarch
2 tablespoons water

Chicken:
2 boneless, skinless chicken breasts, cut into 1/2 inch pieces
1 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil

Directions

1. Pour 1 1/2 cups water, orange juice, lemon juice, rice vinegar, and soy sauce into a saucepan and set over medium-high heat. Stir in the orange zest, brown sugar, ginger, garlic, chopped onion, and red pepper flakes. Bring to a boil. Remove from heat, and cool 10 to 15 minutes.
2. Place the chicken pieces into a resealable plastic bag. When contents of saucepan have cooled, pour 1 cup of sauce into bag. Reserve the remaining sauce. Seal the bag, and refrigerate at least 2 hours.
3. In another resealable plastic bag, mix the flour, salt, and pepper. Add the marinated chicken pieces, seal the bag, and shake to coat.
4. Heat the olive oil in a large skillet over medium heat. Place chicken into the skillet, and brown on both sides. Drain on a plate lined with paper towels, and cover with aluminum foil.
5. Wipe out the skillet, and add the sauce. Bring to a boil over medium-high heat. Mix together the cornstarch and 2 tablespoons water; stir into the sauce. Reduce heat to medium low, add the chicken pieces, and simmer, about 5 minutes, stirring occasionally.

Katsu Chicken


A classic Japanese dish--I've been meaning to make it for date night since we got married, and just got around to it tonight. It's delicious and simple!

4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
salt and pepper to taste
2 tablespoons all-purpose flour
1 egg, beaten
1 cup panko bread crumbs
1 cup oil for frying, or as needed

Season the chicken breasts on both sides with salt and pepper. Dip chicken into the flour, then egg, then panko crumbs. I poured the extra egg onto the panko coated chicken and then sprinkled more panko on it--a thicker layer of egg helps the grease from soaking in which = a healthier meal!

Heat 1/4 inch of oil in a large skillet over medium-high heat. Place chicken in the hot oil, and cook 3 or 4 minutes per side, or until golden brown.

Put the chicken on a paper towel to soak up anything leftover, then cut strips about 1/4 inch thick width-wise. Serve with Kikkoman Katsu Sauce drizzled over the top.

Cheddar Chicken

This recipe was in this month's Real Simple Magazine. I made it tonight for dinner and it was so yummy and very moist. I served with potatoes and asparagus. Tasty meal. Not so low in fat with the butter, but tasted very good.

Cheddar Chicken (Reader Recipe From Jane Walsh)

Ingredients
  • 16 buttery crackers (such as Ritz), crushed (about 3⁄4 cup)
  • 6 ounces sharp Cheddar, grated
  • 1 clove garlic, finely chopped
  • kosher salt and black pepper
  • 4 6-ounce boneless, skinless chicken breasts
  • 4 tablespoons unsalted butter, melted
  • wild rice pilaf and steamed green beans (optional)

Directions

  1. Heat oven to 350° F. In a bowl, combine the crackers, cheese, garlic, and ¼ teaspoon each salt and pepper.
  2. Dip the chicken in the butter, then in the cracker mixture, pressing gently to help it adhere, and place on a foil-lined baking sheet.
  3. Sprinkle any remaining cracker mixture on the chicken and drizzle with any remaining butter. Bake until the chicken is golden brown and cooked through, 25 to 30 minutes. Serve with the pilaf and green beans, if using.

Chicken Julienne

I thought I'd posted this before, but it turns out I can't find it (or I never posted it). Anyway, it's so yummy.

1/2 cup butter, melted
1/2 cup all-purpose flour
1 pound skinless, boneless chicken breasts, cut into strips
2 tablespoons fresh lemon juice
salt and pepper to taste
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 dash paprika, for garnish

Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking dish. Place the butter and flour in separate shallow dishes. Dredge the chicken strips in the butter and then the flour. Place chicken in prepared baking dish. Sprinkle with lemon
juice. Add salt, and pepper, to taste. Pour the heavy cream over the chicken. Sprinkle evenly with Parmesan cheese, and paprika. Bake in preheated oven until cheese melts and cream bubbles, about 20 minutes.

Baked Creamy Chicken Taquitos

Wow, I wonder how long it has been since I last posted anything. Here's a recipe that I tried last night. I really liked them. I even had one this morning for breakfast. (not really breakfast food, but it sounded good - oh gosh I hope I'm not pregnant :)

Baked Creamy Chicken Taquitos

1/3 C (3 oz) cream cheese
1/4 C green salsa (I used chile verde - it was the only "green" salsa I could find. Delish)
1T fresh lime juice
1/2 t cumin
1 t chili powder
1/2 t onion powder
1/4 t granulated garlic
3 T chopped cilantro
2 T sliced green onions

2 C shredded cooked chicken
1 C grated pepperjack cheese

small corn tortillas ( I used flour - I'm a flour girl)
kosher salt
cooking spray


Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray.

Heat cream cheese in the microwave for about 20-30 seconds so it's soft and easy to stir. Add green salsa, lime juice, cumin, chili powder, onion powder and granulated garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well.

You can prepare up to this step ahead of time. Just keep the mixture in the fridge.

Work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking. It helps to place them between damp paper towels. Usually 20-30 seconds will do it. If you find yours are cracking when you roll them or come unrolled right away, just try heating them longer and try the paper towel thing.

Place 2-3 T of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges.

Then roll it up as tight as you can.

Place seam side down on the baking sheet. Lay all of the taquitos on the baking sheet and make sure they are not touching each other. Spray the tops lightly with cooking spray or an oil mister and sprinkle some kosher salt on top.

Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown.

Crispy Chicken Costolleta

Ryan loves the Crispy Chicken Costolleta from the Cheesecake Factory, so I found this copycat recipe that is pretty similar.

Crispy Chicken

4 chicken breasts, cut horizontally, and pounded to about 1/4 inch thick, or use chicken cutlets.
Lemon zest of 2 lemons
1 1/2 cups plain bread crumbs
2 Tablespoons Freshly grated Parmesan (optional)
2 eggs, whisked with 2 T water
3 Tablespoons flour
1 tsp ground pepper
1 tsp kosher salt

Preheat oven to 200 degrees.

Zest two lemons. Bake zest for about 5 minutes until dry. On one paper plate combine flour, pepper and salt. On another paper plate combine eggs and water, whisk until combined. On another paper plate combine dry lemon zest, bread crumbs and cheese. Place pounded chicken in the flour, coating well, followed by the egg mixture and the bread crumbs. Heat 2 Tablespoons olive oil and 1 Tablespoon butter in a large frying pan over medium heat. Place chicken in pan and cook on each side about 5 minutes until middle is no longer pink. You will need to work in batches, adding more oil and butter as needed. Keep chicken warm in oven at 250 degrees.

Lemon Sauce


2 garlic cloves, finely minced
1 tablespoon canola oil
2 cups heavy whipping cream
1 tablespoon Dijon mustard
1/4 cup plus 1 T fresh lemon juice
1/8 cup chicken stock
Kosher salt
Freshly ground pepper
1 tablespoon unsalted butter

Over medium heat in a fairly large saucepan heat canola oil. Add minced garlic and saute about 3 minutes. Add whipping cream and boil until reduced by one-third. Add Dijon, lemon juice, chicken stock and salt and pepper to taste. Simmer about 5 minutes. Remove from heat and stir in butter until melted.

Serve chicken with lemon sauce.

BBQ Chicken and Ranch Pizza

This has become my favorite pizza and since discovering it about a month ago I have made it three times. One time I didn't have any ranch dressing so I made some. I found this ranch dressing recipe on Pioneer Woman, I had to tweak it with what ingredients I had but it turned out really good. Also, I didn't have fresh herbs so I used dried. I may never buy ranch dressing again.

2 cups cooked chicken, chopped or shredded
1 cup Barbecue sauce, divided
1/2 cup diced red onion
1/2 cup Ranch dressing
Shredded mozzarella cheese
Pizza dough

Preheat oven to 400 degrees. In a medium bowl, combine the chicken with 1/2 cup of barbecue sauce; mix until combined. Spread the remaining barbecue sauce on rolled out pizza dough. Place red onion and chicken mixture over sauce. Drizzle ranch dressing over chicken then top with mozzarella cheese. Bake for 15 to 20 minutes.

Creamy Chicken and Chile Enchiladas

1 lb uncooked chicken (or already cooked chicken)
1 pkg (8 oz.) cream cheese, cut into cubes
1 can (4.5 oz.) chopped green chiles
1 can (15 oz.) black beans
1 can (14.5 oz) diced tomatoes, drain off a little of the juice, but not all of it
Flour tortillas
1 or 2 cans (10 oz. can) Green Chile enchilada sauce; depends on if you like a lot of sauce or not
shredded cheddar cheese

Heat Oven 400 deg. Grease 9x13 inch pan.

In a nonstick skillet cook chicken over medium-high heat, stirring occasionally, until no longer pink. Stir in cream cheese, green chiles, black beans, and diced tomatoes; reduce heat to medium. Cook and stir until blended and cream cheese is melted.

Spoon chicken filling into tortillas; roll up and put in pan. Pour enchilada sauce over the top and sprinkle with Cheddar cheese. Bake for 15 to 20 min.

Australian Chicken

Well, this is really just my friend Anne's recipe for grilled chicken, and since she is from Australia....
Australian Chicken
3/4 cup Reduced Sodium La Choy soy sauce
1 tbsp Worcestershire sauce
2 tbsp brown sugar
3/4 cup Sweet Baby Ray's Barbeque sauce, (or any other sauce will do!)
Mix it together and marinade for an hour or longer if you like. Make sure the chicken is fully defrosted before marinating, it just tastes better. Plus I do not use the chicken breast that has been flash frozen. --from Anne

We just estimated all of Anne's ingredients, for simplicity, and that's what she says she does, so... Wade did the grilling and says everyone knows how to grill chicken, just preheat the grill on high, then turn down to medium as soon as all the chicken is on and turn it over several times until done. We also had pineapple to grill on this day, just to add to the joy!

Chicken Enchilada Dip

This recipe is so easy to make and so good. I ended up heating it in a pan on the stove over medium-low heat until everything was heated through.

2 cups shredded cooked chicken
1 can condensed cream of chicken soup, undiluted
1 cup shredded cheddar cheese
1 can 5 oz. evaporated milk
1/2 cup chopped celery
1/3 cup finely chopped onion
1 can 4 oz. chopped green chilies
1 envelope taco seasoning
Tortilla chips

In a 2-qt. microwave-safe dish, combine the first eight ingredients. Microwave, uncovered, on high for 4-5 minutes; stir. Microwave, uncovered, 3-4 minutes longer or until heated through. Serve with tortilla chips. Yield: 3 cups.

Rosemary Ranch Chicken

I have gone a rosemary craze lately. So the next few recipes will have fresh rosemary in them. Hope you like them as much as I do.

Rosemary Ranch Chicken
  • 1/2 cup olive oil
  • 1/2 cup ranch dressing
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon minced fresh rosemary
  • 2 teaspoons salt
  • 1 teaspoon lemon juice
  • 1 teaspoon white vinegar
  • 1/4 teaspoon ground black pepper, or to taste
  • 1 tablespoon white sugar, or to taste (optional)
  • 5 boneless skinless chicken breast cut in half
In a medium bowl, stir together the olive oil, ranch dressing, Worcestershire sauce, rosemary, salt, lemon juice, white vinegar, pepper, and sugar. Let stand for 5 minutes. Place chicken in the bowl, and stir to coat with the marinade. Cover and refrigerate for 30 minutes. Then bake at 375 for 35-45 min (until chicken is done).
Serve with rice. (The sauce is really good over the rice).

Simple Chicken - Slow Cooker Style

I found this recipe on Beth's Mess. It's really simple but we really like it.

Here's the original recipe that Beth shared.

Ingredients:

4 frozen chicken breasts
1 package dry Italian dressing mix
1 c. warm water OR chicken broth

Directions:

1. Place chicken in cooker.
2. Sprinkle dressing mix on top.
3. Pour water/broth over chicken; cover.
4. Cook on low 8-10 hours.


My alterations: I used frozen chicken tenderloins (it doesn't have to cook quite as long). I also add a can of cream of chicken or celery because I like the sauce a little thicker to put on the rice or noodles.
