i ONLY like carol's recipe. it's the yummiest i've ever had.
i don't add the almonds - instead, i add chopped water chestnuts. i use green onion. here's the recipe.
Chicken Salad (Carol Reed)
4 c cooked chicken, cut up (I use canned white meat) 1 c sliced celery 1/3 c chopped onion 1 t salt 1/4 t pepper 1/4 c diced almonds 1/3 c mayonnaise 1 c seedless green grapes, halved
Toss all ingredients. Cover and chill. Serve in pita bread or on croissant rolls. Can be served over lettuce leafs.
Carol's suggestions: I always add the mayo last and add less than it calls for. I stir it all up and then see if it needs more. It is so easy to overdo it on the mayo. Sometimes I leave out the grapes because people think they are weird. And it is really good if you substitute cashew halves for the almonds. That is my favorite recipe yet! (Oh, and we love it on croissants the most!)
I had chicken salad with a friend here in KC. It was the best I've ever tasted. The secret ingredient. . .whipping cream. I don't have the recipe but google chicken salad with whipping cream and you will get several results for ideas.

Great! Thanks for the suggestion. I think keeping it simple works just great for chicken salad.
