Ice Cream

I got this recipe from a lady in my ward.   It is good, as in goo-ooood!

Ice Cream
2 c. sugar
2 eggs

Stir good and add:
1 quart half and half
1 quart whipping cream
1 large package instant vanilla pudding (or chocolate if you're making chocolate ice cream)

Stir all together

Add whole milk to the fill line of your ice cream maker and churn away.

For Cookies and Cream - add one pkg Oreos - if you want more chunks of cookies wait til almost the end to add this.

For Chocolate -  make sure to use the chocolate pudding, and add 1 c. Hershey's syrup and 2 large Hershey Bars with almonds chopped (or you can use plain)

For Strawberry Banana Nut - add 1 container of sweetened strawberries thawed, 3 ripe bananas and 1 c. pecans

Blueberry Cheesecake Ice Cream

We just got the ice cream attachment to our new Kitchen Aid (which we bought for the free ice cream attachment).  The inaugural batch of ice cream was this yummy, full of fat recipe.  Another bonus, no eggs...not sure why that's a big deal...maybe because we were low on eggs on Sunday.

Blueberry Cheesecake Ice Cream


Ingredients
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • 1-1/4 cups fresh or frozen blueberries
  • 1 tablespoon lemon juice
  • GRAHAM CRACKER MIXTURE:
  • 2-1/4 cups graham cracker crumbs (about 36 squares)
  • 2 tablespoons sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup butter, melted
  • ICE CREAM:
  • 1-1/2 cups sugar
  • 1 8-oz package cream cheese, softened
  • 1 quart heavy whipping cream
  • 2 cups milk
  • 2 teaspoons vanilla extract
  • In a small saucepan, combine sugar and cornstarch. Gradually stir in water until smooth. Stir in blueberries and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until slightly thickened, stirring occasionally. Cover and refrigerate until chilled.
  • In a large bowl, combine the cracker crumbs, sugar and cinnamon. Stir in butter. Pat into an ungreased 15-in. x 10-in. x 1-in. baking pan. Bake at 350° for 10-15 minutes or until lightly browned. Cool completely on a wire rack.
  • Meanwhile, in a large bowl or in your mixer, whisk the ice cream ingredients. Fill ice cream freezer cylinder two-thirds full; freeze according to manufacturer's directions. Refrigerate remaining mixture until ready to freeze. Whisk before adding to ice cream freezer (mixture will have some lumps).
  • At the end of the freeze cycle, add the blueberry mixture and crumbled graham cracker crust. Freeze. Yield: 2 quarts.

Frozen Yogurt

This frozen yogurt is so good. I make it with homemade yogurt, but store bought will work too. The recipe I use for homemade yogurt is coming. Enjoy!

3 cups strained plain yogurt* or Greek-style yogurt
2/3 -3/4 cup sugar (depends on how tangy you want it)

Mix together the yogurt, sugar. Stir until the sugar is completely dissolved. Refrigerate 1 hour.

Freeze in your ice cream maker according to the manufacturer's instructions.

*To make strained yogurt, line a strainer with a few layers of cheese cloth. Gather the ends and fold them over the yogurt, then refrigerate for at least 3 hours. So, for the above recipe start with and strain 6 cups of yogurt.

Pina Colada . . . a party in your hand

There's just something about a slushy drink with an umbrella in it that screams "vacation" . . . even if you're just sitting on your patio. Here is my new favorite drink of summer . . . a pina colada.

It's so easy. Mix pineapple sherbet with Dole's newest flavor: Pina Colada juice (found in a rectangle container in the chilled juice section of the store). Mix like a milkshake. Sometimes I make it real thick . . . other times more like a slush. It's a party in your hand . . . .

Lemon Ice

This is one of our family favorites (being the Nelson Family). It is so light and refreshing for a hot summer day.

1 C. water
1 1/2 c. sugar

Boil & Chill

(Or put in microwave for a few minutes mixing in between and then stir a few ice cubes)

ADD:
3/4 c. lemon juice (tastes best with fresh squeezed)
1 tsp. lemon rind
1/8 tsp. salt
4 c. water

Mix all together and put in an ice cream maker and freeze.
