Meals-on-the-Go

I'm taking a meal to a gal in my ward who just had a baby. And I'm wondering what your favorite meal/s are to take that are simple, easy, and tasty for all. Do you do a casserole, crock pot dish, soup? It sometimes seems tricky to keep it warm (yet not mushy), fresh, and generally yummy.

Any ideas?

I usually take lasagna with the "you don't need to cook" noodles. And I think munchies are good, too!! Or bbq pork or beef sandwiches with the buns and meat separate.... can't wait to see other ideas though!

I also do lasagna, but pretty much any baked pasta would be great, too.

I am still trying to think of what I have done in the past. But I remember when I had Beckham all the meals I got were basically the same, a pasta with red sauce. It got a little old after eating it for over a week. I was greatful don't get me wrong. But if you can come up with something else, I would recommend that. The most recent thing I made to take to some one was Angie's slow cooker chicken taco soup. All you have to do is throw everything in the Crock pot and let it cook for a few hours. Sometimes I don't add the chicken and it is still really good. Then take topping to put on in baggies or plastic tubs and a bag of chips. When you take it to the home of the person, ask to pour the soup into one of their own pots, that way they don't have to return anything. :) I liked Jane's idea of bbq sandwiches too. Good luck.

I agree with Jolene on the pasta thing. It can get old. With Lincoln someone actually just grilled up some tasty chicken and made rice and green beans. It was actually refreshing to have something healthy. Although I know that isn't the most easy transport item, sticking it in aluminum pans that can be tossed might make it easier though. I know I have taken chili before and just buy some chips or rolls to go with it. I have to say I also like Jane's idea of bbq beef sandwiches, it would be super easy and something out of the ordinary. I always loved fresh fruit instead of another salad too. We got a lot of green salad when I had Lincoln.

I will add one more -
I just took ham and funeral potatoes to Doug and Tina yesterday. Since hams from Costco are plenty for more than our 2 families it was pretty easy. I just put the funereal potatoes in in two smaller dishes instead of the one big one I usually use. I made a cherry cobbler for desert and we had the same thing for our dinner. It wasn't much more work than making the dinner for us. Best of all I have two dinners planned for this week using the left over ham and ham bone.
