Picnic Cake

My mom tried to post but she couldn't so she left this under the comments:

Here is the recipe for the Picnic Cake. It is a recipe of an old neighbor who lived across the street when we first moved to Idaho.


Picnic Cake

Mix in bowl and let cool.
1 cup dates (I have also used raisins)
1 tsp. baking soda
1 1/2 cups boiling water

Mix in together:
1 cup sugar
3/4 cup shortening
1/2 tsp. salt
2 eggs
1 tsp. vanilla

Add egg mixture to dates
add:
1 3/4 cup flour
1 tsp cinnamon

Put in 9X13 cake pan and cover with 1 cup brown sugar, 6 ounces package of chocolate chips and 1/2 nuts. Bake at 350 for 45 mins.

We love this as a snack cake or to take in lunches. It's good warm with ice cream and even better cold, on the go!
